Summer Berry Crumble:
Serves 12 – calories 224kcal – fats 9g – protein 6g – net carbs 4g – fibre 3g
- 100g, butter, chilled
- 2 cups superfine blanched almond flour
- 2 tablespoons psyllium husk po wder
- 1/8 teaspoon salt
- 2 tablespoons granulated monk fruit
- Pinch lemon zest
FOR THE FILLING
- 4 cups frozen mixed berries
- 1⁄4 cup granulated monk fruit
- 1 teaspoon ground cinnamon
- teaspoon vanilla extract
- Preheat the oven to 180°C
- Combine the crumble ingredients in a medium sized bowl and use your fingers to rub the butter through the dry ingredients until it resembles wet sand. Set aside in the fridge
- Meanwhile, combine all of the filling ingredients in a large bowl and stir
- Tip the berries into an oven safe baking dish and spread them evenly
- Scatter over the crumble mixture evenly (you don’t have to use all the mixture either, save the rest in the freezer for another day)
- Bake in the oven for 30 – 35 minutes, turning half way or until the top is golden brown and the berries are softened. Depending on how thick your layer of crumble is, the cooking may vary.
- Remove and cool for 15 minutes before serving.Store leftovers in an airtight container in the refrigerator for up to 1 week or in the freezer for up to 1 month.
