Summer Berry Crumble:

Serves 12 – calories 224kcal – fats 9g – protein 6g – net carbs 4g – fibre 3g

 

  • 100g, butter, chilled
  • 2 cups superfine blanched almond flour
  • 2 tablespoons psyllium husk po wder
  • 1/8 teaspoon salt
  • 2 tablespoons granulated monk fruit
  • Pinch lemon zest

FOR THE FILLING

  • 4 cups frozen mixed berries
  • 1⁄4 cup granulated monk fruit
  • 1 teaspoon ground cinnamon
  •  teaspoon vanilla extract
  1. Preheat the oven to 180°C
  2. Combine the crumble ingredients in a medium sized bowl and use your fingers to rub the butter through the dry ingredients until it resembles wet sand. Set aside in the fridge
  3. Meanwhile, combine all of the filling ingredients in a large bowl and stir
  4. Tip the berries into an oven safe baking dish and spread them evenly
  5. Scatter over the crumble mixture evenly (you don’t have to use all the mixture either, save the rest in the freezer for another day)
  6. Bake in the oven for 30 – 35 minutes, turning half way or until the top is golden brown and the berries are softened. Depending on how thick your layer of crumble is, the cooking may vary.
  7. Remove and cool for 15 minutes before serving.Store leftovers in an airtight container in the refrigerator for up to 1 week or in the freezer for up to 1 month.
  8. Tip: The crumble works best with frozen berries. however, feel like taking full advantage of the seasons fresh, cheap berries, use the recipe below to turn this crumble into a delicious Summer Berry Pie!
