Ingredients:

  • 1 (15-oz.) cannellini beans drained & rinsed
  • 1 (15oz) kidney beans, drained & rinsed
  • 1 English cucumber, chopped
  • 1 medium red bell pepper, chopped
  • ½ medium red onion, thinly sliced
  • ½ cup fresh Italian parsley, chopped
  • 4 oz feta, crumbled
  • Sea salt to taste
  • Black pepper to taste

FOR THE LEMON VINAIGRETTE:

  • ⅓ cup extra-virgin olive oil
  • 3 tablespoons white wine vinegar
  • 3 tablespoons fresh lemon juice
  • ¼ teaspoon crushed red pepper
  • Sea salt to taste
  • Black pepper to taste

Instructions

  • In a large bowl, toss all the salad ingredients together.
  • In a jar with a fitted lid, add all the lemon vinaigrette ingredients. Close the jar and shake until thoroughly combined.
  • Drizzle vinaigrette over salad & serve.
