Low Carb Lemon Cake:
Seves 14 – calories 188kcal – fats 15g – protein 9g – net carbs 1g – fibre 3g
- 3 eggs
- 1⁄2 cup egg whites
- 1 lemon
- 1/2 cup almond milk, unsweetened
- 1 1/3 cup almond meal
- 1/4 cup coconut flour
- 100 g vanilla protein powder
- 2 tbsp chia seeds
- 1/2 cup granulated monk fruit
- 1 tsp baking powder
- 1/2 cup coconut oil
- Preheat oven to 180C. Ensure eggs are at room temperature. Zest the lemon so you have 1 tbsp zest, then juice the lemon to set aside 4 tbsp juice
- Whisk 3 whole eggs with the egg whites, lemon juice, almond milk, lemon zest and set aside
- In a separate bowl, combine all dry ingredients; almond meal, coconut flour, protein powder, chia seeds, monk fruit and baking powder
- Melt the coconut oil. It is very important to make sure the coconut oil is melted but not hot (it will cook the eggs if it is hot). You want everything
to be approximately room temperature so that it blends together really nicely - Whisk melted coconut oil through the egg mixture
- Pour the dry mixture into the wet mixture and stir
- Spray a silicone loaf pan with coconut oil or line with baking paper. Pour the mix into the loaf pan and use the back of a spoon to smooth the top
- Place in the oven and bake for 15 minutes
- Remove the pan from the oven, cover with foil and decrease the oven temperature to 160C. Bake for another 45–50 minutes or until a skewer comes out clean
- Allow to cool completely before slicing. This will take a couple of hours as it is a dense cake, be patient!
- NOTE: Store in an airtight container in the fridge for up to one week or in the freezer for six months
